TWO TRADITIONAL TUNA RECIPES

Tuna is prepared in different ways in the Canary Islands, the most traditional being boiled with mojo sauce and marinated.

TUNA WITH BOILED MOJO SAUCE.

Preparation of the mojo sauce

INGREDIENTS: 1-2 hot peppers; 6-8 cloves of garlic; cumin; sweet paprika; thyme; oregano; bay leaf; a few slices of bread; white wine; vinegar; olive oil; salt (all measurements are approximate and should be used to taste)

PREPARATION:

  1. Fry the slices of bread in a frying pan with a little oil.
  2. Except for the oil, wine, vinegar and bay leaf, blend the rest of the ingredients with a little water using an electric blender.
  3. Put the blended mixture in a frying pan and add the bay leaf, a little more water, the oil, wine and vinegar, the latter three ingredients in a ratio of three, two and one (i.e. three parts oil to two parts wine and one part vinegar).
  4. Boil for a few minutes.

Preparation of the tuna

INGREDIENTS: 1 kilo of Mogán tuna, skinned and boned, cut into large, regular cubes; olive oil; salt

PREPARATION:

  1. Clean and cut the tuna into large cubes.
  2. In a suitable pot, lightly brown the tuna in a little olive oil and set aside in the same pot.
  3. Finally, pour the mojo sauce into the pan with the tuna, covering it, and simmer the whole mixture over a low heat for about twenty minutes.

CANARIAN MARINATED TUNA

INGREDIENTS: 1 kilo of Mogán tuna cut into squares, a glass of olive oil, 1 head of garlic, 1 tablespoon of paprika, oregano, a handful of salt, 1 glass of water, 1 bay leaf, ground cumin.

PREPARATION:

  1. Put the olive oil, garlic, paprika, oregano, salt and cumin in a blender and blend.
  2. Put the tuna and the contents of the blender in a bowl and leave to rest (ideally overnight).
  3. Fry the tuna in a frying pan with some of the marinade (it should be slightly undercooked inside).
  4. Place the fried tuna in a casserole dish, add the marinade left in the frying pan and the rest of the marinade that has not been used.
  5. Add the water and bay leaf and cook over a medium heat for about 15 minutes.
